The Great British Bake Off is back on our screens, meaning Autumn is finally upon us. We recently held a competition in which you could win £100 for watching the nation’s favourite baking show.
We received so many entries from Bake Off fans, and we thank you all for taking part. We’re so happy our readers were just as excited as us to get our weekly fix of all things cake, bread and biscuit!
Our winner is the wonderful Amy H, who answered the question correctly in the competition. Amy has since shared her affordable recipe for mouth-watering lemon drizzle biscuits.
Preheat the oven to 180 C (350 F) /160 C (320 F) for a fan assisted oven. Line two baking trays with baking/parchment paper.
In a large mixing bowl, add the butter and sugar together. Mix until the ingredients are creamy.
Whisk the egg in a separate jug, then slowly add to the butter and sugar. Mix until combined.
Add the baking soda and salt, then sift the flour into the mixture. Add the lemon juice and the zest.
Slowly fold ingredients until soft biscuit dough forms. (Do not over stir the mixture!)
Roll dough into 16 balls, approximately 1 and a half tablespoons of dough for each biscuit. Bake for approximately 12 minutes or until golden on the edges. Carefully transfer biscuits onto a cooling rack. Allow to cool completely.
To make the lemon glaze, sift the icing sugar into a mixing bowl. Add lemon juice, one tablespoon at a time, and mix. Keep adding a tablespoon of lemon juice until you reach your desired consistency. The glaze should be smooth and thin enough to drizzle on top of the biscuits.
Drizzle glaze over cooled biscuit. Leave for 10-15 minutes to set and then enjoy.
However, when the quantity of each item used is taken into account, the total comes to approximately £1.95. That is less than 13p per biscuit!
Plus, you will have plenty of plain flour, eggs, butter, sugar, icing sugar and bicarbonate of soda to use for future baking ventures. You may even have some of these items in your cupboard already, saving you even more money!
